American Chef Cooks Filipino Food: Traditional Crispy Pata
The Philippines is home to some of the most delicious and unique dishes we have ever had, and we’ve seen so many different cooking techniques that they use to prepare their dishes. In this episode, we try to recreate one of our absolute favorite dishes: Crispy Pata! He fried it twice to make sure the skin is extra crispy, and used the method of Velveting to retain the moisture in the meat and keep it nice and soft.
